The Story Behind the Hops

At Hopunion, we believe in celebrating the agricultural roots of craft beer — in telling the story behind your pint — and in honoring small, independent hop farms throughout the nation. For us, this is the joy of being grower-owned. We take pride in the quality hops that our growers produce and want to share their story with you through a pint of fresh hop ale on a fall afternoon.

For brewer’s, wet hops are the most exciting and unpredictable form of hops. They endow each harvest with a distinct flavor and layer fresh hop beers with multidimensional aromatic qualities. Green Hops® are harvested as whole cones on hop farms throughout the fertile Yakima Valley, and are delivered to Hopunion for shipment in less than 24 hours. The entire process is furious and full of logistical challenges, however, brewers and consumers agree, the taste of each resulting beer is worth every hardship.

Timing & Availability - Due to the timing of harvest and peak maturity date for multiple hop varieties, scheduling a fresh hop brew can be very challenging. Factors such as weather and location all play a role in harvest and can affect when a variety is available to pick and ship. Brewers participating in the Green Hops® program should be aware that while our staff makes every effort to actively communicate anticipated harvest dates, mother nature is the ultimate decision maker. Flexibility is key!

Quantity - Due to water retention, wet hop recipes typically require 3 to 6 times more hops than traditional whole hops and hop pellets. This ratio can vary based on a brewer's tastes, however, it is always greater than 1:1.

Shipping - To ensure quality and freshness, Green Hops® should arrive for immediate brewing within 48 hours of harvest. This requires overnight shipping and results in increased shipping costs (often more than the hops themselves).

Evaporation - From the moment Green Hops® are harvested, water loss begins to occur. As a result, Green Hops® shipments are susceptible to small fluctuations in weight.

Aroma - Green Hops® are unique, what more can we say?  They provide each harvest with a unique flavor and produce aromas that are described as predominantly fresh, grassy, earthy or floral.  These aromas are enticing for craft consumers, but may vary from standard whole hops or hop pellets of the same variety.
